Would like to donate but have questions

I would like to donate anonymously to an Islamic Center/Mosque near me. I am not a practicing Muslim nor do I attend to be. My coworkers are and I really appreciate them. I assume the sense of community is really strong and their ideas/values are a great benefit. They positively influenced me in a # of ways. I want to help foster this so others and I can continue to experience.

I use to be a practicing Catholic but never tithed. When I had more income I no longer was a Catholic. I bring this up to bring context to my questions.

1) For money sent how much goes directly to there in question vs how much goes to a larger body.
2) For % given is there a breakdown on where it would go to? What I mean is to services/events. Apologies for my ignorance and if I came off as rude.
3) If there are other places to donate that would need the help and should be something to consider then I would love to know.

I brought up my background because I am skeptical of money alignment for where donations go in the Catholic Church. How much goes to the Vatican or greater “board” of state/region/country for them.
